- 1/3 c. onion, chopped
- 1 clove garlic, minced
- 1 lb. zucchini, chopped
- 2 Tbsp. butter
- 1/2 tsp. curry powder
- 1 c. chicken broth
- 1/2 c. evaporated milk
- salt and pepper to taste
Directions

1Saute onion, garlic and zucchini in butter until limp.

2Put in blender and blend.

3Add curry powder, broth, evaporated milk and salt and pepper; stir.

4Serve hot or cold.
