- 1 sheet prepared dough (pie)
- about 1 zucchini (1/2 lb.)
- 1/4 tsp. salt
- 3 eggs
- 1/2 c. milk
- 1/2 c. heavy cream
- pinch of nutmeg (1/4 tsp.)
- 1/8 tsp. pepper
- 1/4 lb. Gruyere cheese
Directions

1Preheat oven to 350°.

2Fit dough into a 9-inch tart pan.

3Line shell by pressing a double thickness of aluminum foil against dough.

4Bake 15 minutes.

5Remove foil and bake until the edges brown, 10 to 15 minutes.

6Grate zucchini.

7Toss with salt.

8Beat eggs to mix and stir in milk.

9Cream nutmeg and pepper.

10Drain zucchini and blot with paper towels to remove excess moisture. Grate cheese and sprinkle half of it in tart shell.

11Cover with zucchini.

12Pour in milk and cream mixture and top with remaining cheese.

13Bake until puffed and golden, 35 to 40 minutes.
