  • 1 Tbsp. oil
  • 3 eggs, lightly beaten
  • 2 cups water
  • 1 pkg. (16 oz.) frozen stir-fry vegetables, thawed
  • 1/4 cup soy sauce
  • 1 chicken bouillon cube
  • 2 cups MINUTE White Rice, uncooked

Directions

    Heat oil in large skillet on medium heat.

    Add eggs; cook until set, stirring occasionally.

    Remove from skillet.

    Add water, vegetables, soy sauce and bouillon to skillet; bring to boil.

    Stir in rice; cover.

    Remove from heat.

    Let stand 5 minutes.

    Stir in cooked eggs.

    Serve immediately.
