- 1/2 lb. bacon
- 2 c. long grain rice
- 1 c. chopped onion
- 1 tsp. salt
- 1 (16 oz.) can bean sprouts
- 1 (6 oz.) can mushrooms, undrained
- 2 c. cooked chicken or pork
- 3 c. chicken broth
Directions

1Cook bacon until crisp in heavy skillet with tight fitting lid. Remove bacon and all but 1/3 cup drippings.

2Add rice and brown; add onion, cook 1 minute more.

3Add other ingredients along with crumbled bacon.

4Bring to boil.

5Reduce heat and simmer 20 minutes. Makes large amount and freezes well.
