- 1 cup basmati or other long-grain rice
- A pinch of salt
- 2 cups water
- 1 tablespoon butter
Directions

1Wash well in a few changes of water: 1 cup basmati or other long-grain rice

2Put into a heavy saucepan with: A pinch of salt, 2 cups water

3Set aside to soak for 30 minutes.

4When ready to cook, add: 1 tablespoon butter

5Bring to a boil and cook, uncovered, until the water is absorbed and the surface of the rice is covered with steam holes.

6Turn the heat to low and cover tightly.

7Cook for 7 minutes.

8Turn off the heat and let sit for 10 minutes.

9Stir gently to fluff and serve.

10Add 1/8 teaspoon saffron with the butter.
