- 3 medium to large acorn squash (choose those that are more orange in color)
- 3 eggs
- 1 stick butter or margarine
- 2 c. sugar or to taste
- 1 c. milk
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
Directions

1Rinse and peel squash; cut in half and remove seeds.

2Cut into cubes and boil until tender (like potatoes).

3When done, mash the squash in a large bowl or pot.

4Whip with beater until smooth (this will also remove any stringy pieces).

5When smooth, add all other ingredients and beat to combine.

6Pour into a long baking dish and bake at 350° until firm and brown around edges.

7Serve hot or cold. Happy baking.
