Ingredients

  • 3 medium to large acorn squash (choose those that are more orange in color)
  • 3 eggs
  • 1 stick butter or margarine
  • 2 c. sugar or to taste
  • 1 c. milk
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon

Directions

    Rinse and peel squash; cut in half and remove seeds.

    Cut into cubes and boil until tender (like potatoes).

    When done, mash the squash in a large bowl or pot.

    Whip with beater until smooth (this will also remove any stringy pieces).

    When smooth, add all other ingredients and beat to combine.

    Pour into a long baking dish and bake at 350° until firm and brown around edges.
