  • 1 12 lbs plain flour
  • 1 12 lbs currants
  • 1 lb sugar
  • 14 lb butter
  • 12 lb lard
  • 12 pint milk
  • 2 eggs, beaten
  • 12 teaspoon nutmeg, grated
  • 12 teaspoon mixed spice
  • 12 teaspoon baking powder
  • 14 teaspoon salt

    Preheat oven to 350F.

    Sift all dry ingredients except for the currants together.

    Rub in the butter and lard.

    Add the currants.

    Make a well in the centre, pour in the eggs and mix together, gradually adding the milk, until you have a fairly soft consistency.

    Grease two cake tins, divide mixture equally between them and bake at 350 F for about 1 1/2 hours.
