Ingredients

  • 2 c. rolled oats
  • 2 c. boiling water
  • 4 eggs, beaten
  • 2 c. sugar
  • 1 c. oil
  • 1 qt. buttermilk
  • 3 c. whole wheat flour *
  • 2 c. all-purpose flour
  • 5 tsp. baking soda
  • 1 tsp. salt
  • 4 c. All-Bran cereal

Directions

    Combine oats and boiling water; let cool.

    Mix together eggs, sugar, oil and buttermilk.

    Stir in sifted dry ingredients with All-Bran just until moistened.

    Store in covered containers in refrigerator up to 6 weeks.

    Bake in well-greased muffin tins. Raisins, nuts or chopped dates may be added to batter before baking at 375°

    for 15 to 20 minutes.

    Makes 5 to 6 dozen muffins.
