Ingredients

  • 1 (6 oz.) can crab meat, rinsed, drained and cartilage removed
  • 1/2 c. shredded carrot
  • 1/2 c. finely shredded Monterey Jack cheese
  • 2 Tbsp. sliced green onion
  • 1 tsp. all-purpose flour
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 4 scallop shells or ramekins (4-inch)
  • 1/4 c. half and half
  • 1 egg
  • paprika

Directions

    In small mixing bowl, combine crab meat, carrot, cheese, onion, flour, nutmeg, salt and pepper.

    Spoon 1/4 of mixture into each scallop shell.

    Arrange shells on serving platter.
