- 1/4 cup apple juice or 1/4 cup apple cider
- 1 tablespoon fresh ginger (minced) or 1/4 teaspoon powdered ginger
- 1/4 cup cider vinegar
- 1/3 cup soy sauce
- 1/3 cup honey
- 2 garlic cloves (crushed)
- 4 boneless chicken thighs
Directions

1Whisk first six ingredients in a bowl.

2Put chicken in a large re-sealable plastic bag.

3Then pour marinade over chicken in the bag.

4Seal and refrigerate for 2-3 hours.

5After marinating, place chicken in a 9 x 13 baking dish.

6Cover with remaining marinade.

7Bake in a preheated 400 degree oven for about 30 minutes.

8Serve with hot cooked rice, if desired.
