Apple Impromptu

- 4 c. pared, sliced apples
- 3/4 c. sugar
- 1/4 tsp. cinnamon
- 1 Tbsp. butter
- 1 egg, slightly beaten
- 1 tsp. vanilla extract
- 1/2 tsp. baking powder
- 1/2 c. sifted all-purpose flour
Directions

1Preheat oven to 400°.

2Place apples in a well-greased 8 or 9-inch pie pan.

3Combine 1/4 cup of sugar with the cinnamon. Sprinkle over apples.

4Cover with foil.

5Bake in a 400° oven for 20 minutes.

6Meanwhile, cream butter and gradually add 1/2 cup sugar; blend in egg and vanilla extract.

7Sift flour with baking powder, then blend into cream mixture.

8Remove apples from oven and spread cream mixture over apples.

9Bake another 20 to 25 minutes.

10Serve warm or cold.
