- 1/4 lb. smoked ham hock
- 6 c. water
- 1 can peas
- 2 c. uncooked long, grained rice
- 1 c. chopped green pepper
- 2 Tbsp. butter
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. chopped tomatoes
Directions

1Bring ham hock and water to a boil.

2Reduce heat.

3Cover and simmer 1 hour.

4Remove ham hock and cut meat from bone.

5Stir ham and remaining ingredients, except tomatoes, into water.

6Bring to a boil.

7Reduce heat, cover and simmer for about 20 minutes, or until rice and peas are tender, stirring occasionally.

8Add tomatoes and cook until hot.
