  • 1 1/2 c. firmly packed brown sugar
  • 2/3 c. vegetable oil
  • 1 egg
  • 1 c. buttermilk
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 1/2 c. diced apples
  • 1/2 c. chopped pecans
  • 2 1/2 c. flour
  • 1/3 c. sugar
  • 1 tsp. melted butter

    Combine the first 3 ingredients.

    In another bowl, combine buttermilk, soda, salt and vanilla; add to the sugar mixture alternately with flour, mixing after each addition.

    Fold in the apples and pecans.

    Pour into muffin papers in muffin pan. Combine sugar and melted butter; sprinkle on top of each muffin. Bake at 325° for 30 minutes, or until cake tester comes out clean. Yields about 15 muffins.
