  • 1 1/2 c. packed brown sugar
  • 2/3 c. vegetable oil
  • 1 1/2 c. chopped apples, peeled
  • 1 c. buttermilk
  • 1/3 c. sugar
  • 1 tsp. melted butter
  • 1 tsp. vanilla
  • 2 1/2 c. flour
  • 1 egg
  • 1 tsp. baking soda
  • 1 tsp. salt

Directions

    Combine brown sugar, oil and egg in large bowl.

    Mix buttermilk with baking soda, salt and vanilla.

    Add to brown sugar mixture alternately with flour, mixing well after each addition. Fold in apples.

    Spoon into paper-lined muffin cups.

    Sprinkle with mixture of sugar and melted butter.

    Bake at 325° for 30 minutes or until golden brown.

    Makes 24 muffins.
