Apple Pecan Cake

- 2 c. sugar
- 1 1/2 c. Wesson oil
- 2 tsp. vanilla
- 2 eggs, well beaten
- 3 c. peeled and diced apples
- juice of 1/2 lemon
- 1 tsp. salt
- 3 c. plain flour
- 1/4 tsp. soda
- 1 1/2 c. pecan pieces
Directions

1Combine sugar, oil, vanilla, eggs, lemon juice and salt in mixing bowl; beat well.

2Sift flour and soda together; add to first mixture.

3Beat well again.

4Add apples and pecans.

5This mixture will be very stiff.

6You may have to mix it by hand.

7Bake in a tube pan for 1 hour at 325°.

8Do not overcook.
