  • 1 c. cooking oil
  • 2 eggs, well beaten
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 2 c. nuts, chopped
  • 2 c. sugar
  • 2 1/2 c. plain flour
  • 2 tsp. baking powder
  • 2 c. fresh apples, diced

Directions

    Beat eggs well. Combine oil, sugar and eggs. Cream together. Sift together the dry ingredients and mix all together except apples and nuts. Stir in apples and nuts. Bake in tube pan at 350° for approximately 1 hour or until toothpick comes out clean.
