Apple Raisin Bran Muffins

  • 2 c. Nabisco 100% Bran cereal
  • 1 1/4 c. Dannon nonfat or low-fat plain yogurt
  • 1/2 c. skim milk
  • 1/4 c. Fleischmann's margarine, melted
  • 1/4 c. Egg Beaters
  • 1 c. all-purpose flour
  • 1/3 c. firmly packed light brown sugar
  • 1/2 c. chopped apple
  • 1/2 c. seedless raisins
  • 1 Tbsp. baking powder
  • 1 tsp. ground cinnamon

Directions

    Mix cereal, Dannon nonfat or low-fat yogurt, milk, margarine and egg product; let stand for 5 minutes.

    In a bowl, blend flour, sugar, baking powder and cinnamon.

    Stir in bran mixture just until blended.

    Stir in apples and raisins.

    Spoon batter into 12 greased 2 1/2-inch muffin pan cups.

    Bake at 400° for 22 minutes or until done.
