Stuffed Pepper Pot

  • 4 large green peppers
  • 1 lb. ground beef
  • 1 onion, chopped
  • 2 c. cooked rice
  • 8 oz. can tomato sauce
  • 2 Tbsp. celery, chopped
  • 1 tsp. salt
  • dash of pepper

Directions

    Cut thin slice from stem end of pepper and remove seed.

    In 1 1/2-quart casserole dish combine onion and ground beef.

    Place in microwave and cook 2 to 3 minutes on High or until beef is slightly brown.

    Add remaining ingredients, except peppers.

    Mix well. Stuff peppers with mixture and place on baking sheet.

    Cover with plastic wrap and microwave 12 to 15 minutes on Medium-high.

    Make sure baking sheet is microwavable.
