Apple Raisin Tapioca

  • 1 c. raisins
  • 2 qt. water
  • 1/2 c. sugar
  • 1/2 c. Minute tapioca
  • 2 qt. diced apples
  • 1 c. white or brown sugar
  • 1 tsp. cinnamon

Directions

    Bring raisins and water to a boil.

    Mix tapioca and sugar.

    Add to water, stirring constantly.

    Boil 3 to 5 minutes or until tapioca is not quite clear.

    Remove from heat.

    Mix the remaining ingredients in large buttered baking dish.

    Pour the tapioca over the apples.

    Bake at 375° for 45 minutes or until apples are soft.
