Apple Walnut Cake

- 2 granny smith apples
- 1/2 cup unsalted butter (softened)
- 1 cup sugar, plus
- 2 tablespoons sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup flour
- 1/2 cup walnuts (chopped)
Directions

1Preheat oven to 375°F.

2Grease and flour 9 inch cake pan.

3In a large bowl, beat butter until fluffy. Add sugar, then eggs and vanilla, beating after each addition.

4In another bowl, sift together salt, baking powder, and flour. Stir into butter mixture. Spread batter evenly in cake pan.

5Peel, core and thinly slice apples. Press slices into batter and top with walnuts and 2 tablespoons sugar.

6Bake 40-45 minutes, or until golden brown. Cool 10 minutes.
