Ingredients
- 1 lb. dried apricots, chopped
- sugar
- honey
- 1 Tbsp. lemon juice
- 1/4 tsp. almond extract
Directions

1Place the chopped apricots in a saucepan.

2Cover with water. Simmer until the apricots are soft and tender, about 1/2 hour. Add water if necessary to keep apricots covered.

3With slotted spoon, remove fruit pulp and measure.

4Return to pan.

5For every cup of fruit, add 1/3 cup sugar and 1/3 cup honey.

6Add lemon juice.

7Simmer 1/2 hour until thickened.

8Stir in the almond extract.

9Pour into hot, sterilized jars and seal with paraffin.
