Apricot Nut Bread

  • 1 1/4 c. dried apricots
  • 2 1/2 c. all-purpose flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/4 c. blanched almonds, chopped
  • 1/4 c. walnuts or filberts, chopped
  • 1/4 c. flaked coconut
  • 2 eggs
  • 3/4 c. sugar
  • 3 Tbsp. butter, melted
  • 1/2 c. reserved water from soaking apricots or 3/4 c. warm water
  • 1/2 c. canned coconut milk
  • 1 Tbsp. grated lemon rind
  • 1 Tbsp. lemon juice

Directions

    Soak apricots in water to cover for 2 hours or until soft. If there is excess water, reserve 1/2 cup.

    Roughly chop the apricots and set aside.

    (Chopping the apricots first, then soaking them is easier.)

    Using a large bowl, combine the flour, baking powder, salt and baking soda; sift 3 times.

    This is to mix all the dry ingredients evenly.

    Stir in the nuts and set aside.
