Ingredients

  • 16 medium hard-boiled eggs
  • 3/4 c. mayonnaise
  • 1/4 c. unsalted butter
  • 2 tsp. Dijon mustard
  • 2 tsp. pureed onion
  • dash of Worcestershire
  • 1/2 tsp. salt and pepper
  • 1 oz. capers
  • 1 oz. bacon bits
  • 1 oz. Blue cheese
  • 6 anchovy fillets

    Peel and halve eggs lengthwise.

    Remove yolk and mash thoroughly.

    Blend with mayonnaise, butter, Dijon, onion, Worcestershire, salt and pepper.

    Divide yolk mixture into four portions and blend one with capers, one with bacon, one with anchovies and one with Blue cheese.

    Refill egg halves with fillings.

    Chill before serving.
