- 2 lb. potatoes (6 medium)
- 1 medium onion, chopped
- 1/4 c. margarine or butter
- 1 Tbsp. all-purpose flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c milk
- 2 c. shredded Cheddar cheese
- 1/4 c. fine bread crumbs
- paprika
Directions

1Prepare and slice potatoes in thin slices, about 4 cups.

2Cook onion in margarine in a 2-quart pan until tender.

3Stir in flour, salt and pepper.

4Cook over low heat, stirring constantly until mixture is bubbly.

5Remove from heat and stir in milk and 1 1/2 cups of cheese.

6Heat to boiling about 1 minute and remove from heat.

7Place potatoes in ungreased 1 1/2-quart casserole.

8Pour cheese sauce over potatoes and top with remaining 1/2 cup cheese and bread crumbs.

9Sprinkle with paprika.

10Bake, uncovered, in 325° oven for 1 hour and 20 minutes or until done.
