Autumn Turkey Pie

  • 1 c. chopped onion
  • 3 Tbsp. flour
  • 2 Tbsp. margarine
  • 2 c. chicken broth
  • 1/4 tsp. thyme
  • 1/4 tsp. Tabasco sauce
  • 2 c. cooked turkey or chicken
  • 1 1/2 c. cooked diced carrots
  • 1 1/2 c. cooked diced potatoes
  • 1 c. steamed and chopped celery
  • pastry for 2 pie crusts

Directions

    Saute desired amount of onion in margarine. Sprinkle in flour. Cook and stir for a few minutes. Gradually add broth. Add thyme and Tabasco. Cook, stirring constantly, until it boils and begins to thicken. Place pastry in pie plate. Pour sauce, meat and vegetable mixture in pie plate. Top with crust. Crimp edges and slash top. Bake at 350° for 30 to 35 minutes. This can be made with one pie crust and baked in a 9 x 12 baking dish, placing the pie crust on top.
