- 1 tbsp butter
- 7 oz bacon, finely chopped
- 2 None small plum tomatoes, seeded, finely chopped
- 2 None green onions, thinly sliced
- 24 None scallops, roe removed, on the half shell, shells washed
- 1 oz coarsely grated Parmesan cheese
Directions

1Melt butter in a medium frying pan over medium-high heat. Cook bacon for 5 mins, or until crisp. Remove from heat and stir in tomatoes and onions.

2Preheat grill. Place scallops in clean shells. Grill for 5 mins, or until cooked to your liking. Top with bacon mixture and cheese. Grill until cheese melts. Serve.
