- 2 lb. pea beans
- 1/2 lb. salt pork
- 8 Tbsp. honey
- 1 tsp. baking soda
- 3 c. hot water
- 2/3 c. molasses
- 2 tsp. dry mustard
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 medium onion
Directions

1Soak beans overnight.

2In morning, change water and parboil them for 15 minutes with baking soda.

3Drain beans and rinse with cold water.

4Dice salt pork rind in 1-inch squares.

5Place in bottom of bean pot.

6Add whole onion.

7Add beans.
-
8Mix remaining ingredients with hot water.

9Add to pot.

10Beans should be covered with liquid.

11Add small amount of water, if necessary.

12Bake for 6 hours at 300°.
