- 2 1/4 lb. dry small pea beans
- 1 c. sugar (heaping)
- 2 1/4 tsp. dry mustard
- 4 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. ginger
- 4 1/2 Tbsp. dark Karo syrup
- 4 1/2 Tbsp. molasses
- 1/2 lb. salt pork
- 1 onion
- hot water
Directions

1Inspect beans; wash and cover with water.

2Soak overnight. In the morning, drain the beans.

3Cover with fresh water; simmer for 15 minutes.

4Drain and rinse with water.

5Scrape and score salt pork.

6You may chop onion, or bury it whole in center of beans.

7Add remainder of ingredients to beans with enough water to cover.

8Top with salt pork.

9Bake in a 250° oven for 8 hours.

10Add water when necessary.
