  • 2 eggs
  • salt and pepper to taste
  • 1 large can cream-style corn
  • 1 large can whole kernel corn (include the liquid)
  • 2/3 c. half and half
  • 60 crushed soda crackers (reserve some crackers for the top)

Directions

    Beat eggs in bowl until frothy.

    Add chunks of butter (about 4 tablespoons), half and half and cracker crumbs.

    (Reserve small amount for top.)

    Add corn and liquid; stir well.

    Turn into a buttered 2-quart casserole dish.

    Top with reserved crackers and dot with butter.

    Bake at 350° for 45 to 60 minutes.
