Baked Pizza Pockets

- 2 lb. Ricotta cheese
- 1/2 c. grated cheese
- 3 1/2 c. mixed and finely chopped salami, ham and pepperoni (optional)
- 6 large Syrian pocket or pouch bread
- 5 extra large eggs
- 1 1/2 c. finely chopped Muenster and Mozzarella cheese
- 1 Tbsp. chopped parsley
Directions

1Cut a thin slice from top of each pouch bread.

2Mix filling. Fill pouches carefully, then pat gently to distribute filling. Place on lightly greased baking sheets.

3Brush tops lightly with oil.

4Bake at 325° for 30 minutes.

5When lukewarm, cut into wedges with serrated knife.

6Serves 6 or more.
