Baked Pizza Pockets

Ingredients

  • 2 lb. Ricotta cheese
  • 1/2 c. grated cheese
  • 3 1/2 c. mixed and finely chopped salami, ham and pepperoni (optional)
  • 6 large Syrian pocket or pouch bread
  • 5 extra large eggs
  • 1 1/2 c. finely chopped Muenster and Mozzarella cheese
  • 1 Tbsp. chopped parsley

Directions

    Cut a thin slice from top of each pouch bread.

    Mix filling. Fill pouches carefully, then pat gently to distribute filling. Place on lightly greased baking sheets.

    Brush tops lightly with oil.

    Bake at 325° for 30 minutes.

    When lukewarm, cut into wedges with serrated knife.

    Serves 6 or more.
