- 2 c. uncooked instant rice
- 3 eggs
- 1 c. sugar
- 1/4 tsp. salt
- 1/4 tsp. vanilla
- 3 c. milk
- 2 Tbsp. cinnamon-sugar mixture
Directions

1Preheat oven to 350°.

2Cook rice according to package instructions.

3In large ovenproof dish, beat eggs.

4Whisk in vanilla, salt, sugar and milk.

5Add cooked rice.

6Place dish in larger ovenproof pan filled with 2 inches water.

7Bake 30 minutes. Sprinkle cinnamon-sugar mixture over rice.

8Bake 30 more minutes or until a knife inserted in center comes out clean.

9Top with whipped cream, optional.
