Baked Stuffed Squash

  • 1 small or medium squash
  • 2 c. ground beef
  • 2 Tbsp. onion, chopped
  • 1/8 tsp. black pepper
  • 1/8 tsp. thyme
  • 2 cans tomato sauce
  • 2 c. bread crumbs
  • 3 Tbsp. butter or bacon grease
  • 2 tsp. salt
  • 1/2 c. green pepper, chopped

Directions

    Cut the top from the squash or cut squash in halves lengthwise.

    Steam until nearly cooked (1/2 hour or more).

    Remove from the water; scoop out inside about 1-inch all around and all the squash from the top.

    Sprinkle the inside with salt and add stuffing.
