  • 2 slightly beaten egg whites
  • 1 cup mashed banana
  • 34 cup sugar
  • 14 cup cooking oil

    Spray an 8x4x2 inch loaf pan with nonstick coating.

    In a medium bowl stir together the flour, baking powder, baking soda, cinnamon, and salt.

    In a large mixing bowl stir together the egg whites, banana, sugar, and oil.

    Add flour mixture all at once to banana mixture.

    Bake in a 350 oven for 45-50 minutes or until a toothpick inserted near the center comes out clean.
