  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 c. sugar
  • 1/2 tsp. or less salt
  • 3 to 4 mashed bananas (about 1 1/2 c.)
  • 1/2 c. egg substitute or 2 eggs
  • 1 tsp. vanilla
  • 1/2 c. safflower oil
  • 3/4 c. plain nonfat yogurt
  • 2/3 c. raisins

    Sift together flour, soda, sugar and salt.

    Set aside.

    Whirl bananas, egg, vanilla and oil in blender; fold in yogurt.

    Add raisins; pour over dry ingredients.

    Blend with wire whisk until smooth.

    Grease a loaf pan with tub safflower margarine; pour batter in pan.

    Bake 1 hour at 350°.
