Banana Raisin Bread

- 1 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1 c. sugar
- 1/2 tsp. or less salt
- 3 to 4 mashed bananas (about 1 1/2 c.)
- 1/2 c. egg substitute or 2 eggs
- 1 tsp. vanilla
- 1/2 c. safflower oil
- 3/4 c. plain nonfat yogurt
- 2/3 c. raisins
Directions

1Sift together flour, soda, sugar and salt.

2Set aside.

3Whirl bananas, egg, vanilla and oil in blender; fold in yogurt.

4Add raisins; pour over dry ingredients.

5Blend with wire whisk until smooth.

6Grease a loaf pan with tub safflower margarine; pour batter in pan.

7Bake 1 hour at 350°.
