Ingredients

  • 1 1/4 c. dry lima beans (1/2 lb.)
  • 1 ham bone
  • 1/2 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon vinegar
  • 2 tbsp. molasses
  • 3 tbsp. chili sauce

Directions

    Place beans in soup pot with ham bone.

    Add in 3 c. water.

    Boil 2 min, remove from heat, cover and let stand 1 hour.

    Preheat oven to 300 degrees.

    Drain beans, reserving 1 c. liquid.

    Combine beans and reserved liquid with remaining ingredients.

    Bake in 1 1/2 qt casserole for 2 1/4 hrs, uncovering last 30 min.

    More liquid may be added if necessary.
