Ingredients

  • 3 cloves garlic
  • 2 bay leaves
  • 1 tsp. whole allspice berries
  • 4 whole cloves
  • 2 slabs baby back ribs (about 3 1/2 lb.)
  • 2 Tbsp. oil
  • 1 medium onion, chopped
  • 2 c. fresh or canned tomatoes, drained
  • 1 (8 oz.) can tomato sauce
  • 1/2 c. pure maple syrup or corn syrup
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. hickory smoked salt and hot pepper

Directions

    Tie garlic, bay leaves and cloves in double thickness of cheesecloth.

    Cut each slab of ribs in half.

    Put ribs and spice mixture into oven.

    Add cold water to cover and simmer 30 minutes or until fork-tender.

    Drain.
