- 1 fresh turkey
- butter, melted
- flour

1Rinse turkey and pat dry.

2Melt butter and add flour to make a paste.

3(Paste should be heavy enough to stick to turkey without falling off.)

4Prepare grill for indirect cooking with pan under turkey.

5While coals are heating, cover turkey in paste.

6This prevents the need for basting.

7Cook turkey on grill for 13 minutes a pound, or until it reads 170° on meat thermometer.

8(Don't touch bone with thermometer.)

9Add 8 coals per side every hour until turkey cooks.

10This turkey is moist and beautifully pink edged with good smoky flavor.
