Barley Salad

Ingredients

  • 2/3 c. barley
  • 1 medium carrot, coarsely shredded
  • 1 medium green pepper, quartered and cut into thin strips
  • 1 green onion (scallion)
  • 1/4 c. salad oil
  • 1/4 c. minced parsley
  • 1 Tbsp. sugar
  • 1 Tbsp. vinegar

Directions

    Heat 2 quarts water to boiling.

    Add barley; bring to boil, reduce heat and simmer 40 minutes or until barley is tender. Rinse with cold water; drain.

    Place vegetables and barley in large bowl.

    Cut onions into 2-inch pieces.

    Brown in hot salad oil.

    Discard green onion.

    Add oil to barley mixture, tossing to coat.

    Stir in rest of ingredients.

    Cover and refrigerate two hours.
