Barley Salad

Ingredients
- 2/3 c. barley
- 1 medium carrot, coarsely shredded
- 1 medium green pepper, quartered and cut into thin strips
- 1 green onion (scallion)
- 1/4 c. salad oil
- 1/4 c. minced parsley
- 1 Tbsp. sugar
- 1 Tbsp. vinegar
Directions

1Heat 2 quarts water to boiling.

2Add barley; bring to boil, reduce heat and simmer 40 minutes or until barley is tender. Rinse with cold water; drain.

3Place vegetables and barley in large bowl.

4Cut onions into 2-inch pieces.

5Brown in hot salad oil.

6Discard green onion.

7Add oil to barley mixture, tossing to coat.

8Stir in rest of ingredients.

9Cover and refrigerate two hours.
