  • 4 Egg yolks
  • 1 cup Ice water
  • 1 quart oil
  • 1 Salt
  • 1 Pepper
  • 2 Lemons

    In food processor egg yolks, pinch of S&P, juice of half lemon

    Have oil ready to go.

    Trick is to add oil very slowly

    Turn on processor, slowly drizzle oil into yolk mixture

    Should emulsify quickly.

    Add water or oil to change consistency.

    Water will thin it out, oil will thicken

    You will have to add salt, pepper, and lemon juice to taste

    To make a flavored aioli just add whatever it is.

    Heat garlic in oil until it looks wrinkled and brown.

    Use this oil in place of other for a roasted garlic aioli.
