- 4 Egg yolks
- 1 cup Ice water
- 1 quart oil
- 1 Salt
- 1 Pepper
- 2 Lemons
Directions

1In food processor egg yolks, pinch of S&P, juice of half lemon

2Have oil ready to go.

3Trick is to add oil very slowly

4Turn on processor, slowly drizzle oil into yolk mixture

5Should emulsify quickly.

6Add water or oil to change consistency.

7Water will thin it out, oil will thicken

8You will have to add salt, pepper, and lemon juice to taste

9To make a flavored aioli just add whatever it is.

10Heat garlic in oil until it looks wrinkled and brown.

11Use this oil in place of other for a roasted garlic aioli.
