Basic Cornbread Dressing

- 2 c. crumbled cornbread
- 1/2 c. dry bread crumbs
- 2 medium onions, chopped
- 1/2 green pepper, chopped
- salt and pepper
- 2 Tbsp. bacon drippings
- 2 eggs, beaten
- 2 stalks celery, chopped
- chicken broth
- 1/2 tsp. celery salt
Directions

1Saute onions, celery and green peppers.

2Soften bread crumbs with chicken broth.

3Add sauteed vegetables and eggs.

4Stir your dressing until it is smooth.

5There is no way to tell if this has the right amount of salt unless you taste it.

6You can vary this by adding 1/8 teaspoon Mexican chili powder or Creole seasoning gives it a good flavor.

7Chopped parsley is always good.

8Heat in 400° oven until heated through.

9Makes 6 to 8 servings.
