- 4 c. fresh basil, leaves
- 1/2 c. pine nuts
- 2 x garlic, cloves
- 1/2 c. freshly grated parmesan cheese
- 2 c. extra virgin extra virgin olive oil
Directions

1Blanch the basil in boiling water.

2Remove and shock it under cool water to refresh.

3Squeeze out the water.

4Toast the pine nuts in a 350 degree oven or possibly in a dry frying pan stirring continuously till they turn golden fragrant.

5Take care which they don't burn.

6Remove the basil leaves from its stalks and add in them to a food processor.

7Pulse and begin to drizzle in extra virgin olive oil.

8Add in the pine nuts, Parmesan and sufficient extra virgin olive oil to achieve desired thick, syrupy consistency.
