Basil Pesto Recipe

Ingredients

  • 4 c. fresh basil, leaves
  • 1/2 c. pine nuts
  • 2 x garlic, cloves
  • 1/2 c. freshly grated parmesan cheese
  • 2 c. extra virgin extra virgin olive oil

Directions

    Blanch the basil in boiling water.

    Remove and shock it under cool water to refresh.
  3. 3
    Squeeze out the water.

    Toast the pine nuts in a 350 degree oven or possibly in a dry frying pan stirring continuously till they turn golden fragrant.

    Take care which they don't burn.

    Remove the basil leaves from its stalks and add in them to a food processor.

    Pulse and begin to drizzle in extra virgin olive oil.

    Add in the pine nuts, Parmesan and sufficient extra virgin olive oil to achieve desired thick, syrupy consistency.
