  • 1 tsp. salt
  • 1 egg, beaten
  • 1 (3 1/2 to 4 lb.) broiler, cut up
  • 1 tsp. baking powder
  • 1/4 tsp. pepper
  • 3/4 c. milk
  • vegetable oil

    Combine first 6 ingredients; mix well.

    Dip chicken pieces into batter.

    Heat 1-inch of oil in a large skillet to 375°; add chicken and brown quickly on all sides.

    Reduce heat; cover and fry 25 minutes or until chicken is tender and golden brown, turning occasionally.
