Ingredients
- 1 tablespoon olive oil
- 1 cup chopped red onion
- 1 tablespoon minced garlic
- 2 teaspoons chili powder
- 1 teaspoon mustard powder
- 2 cups vegetable broth
- 3/4 cup tomato sauce
- 3 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons honey
- 1 1/2 cups dried brown lentils, rinsed
- salt, to taste
- fresh ground pepper, to taste
Directions

1Heat oil in 2 qt pan on med heat.

2Add onion and cook 3 minutes or until softened.

3Add garlic, chili powder and mustard powder; cook 1 minute or until fragrant.

4Do not brown the garlic.

5add broth, sauce, vinegar, mustard, honey, and lentils; stir well and bring to boil.

6Reduce heat to low; cover and simmer 30 minutes until lentils are tender but intact.

7Cook times will vary if needed add 1/4 cup water and simmer five more minutes.

8Season with salt and pepper.
