- 1 lb. pinto beans
- 3 lb. pork roast (lean)
- 7 c. water
- 1/2 c. chopped onions
- 2 garlic cloves, chopped or garlic powder
- 1 tsp. cumin
- 1 tsp. oregano
- 1 (4 oz.) can chopped green chilies
- 1 (2 oz.) jar diced pimentos
- corn chips
Directions

1Place beans, pork roast, water, onions, garlic, chilies and pimentos in a heavy kettle. Cover and simmer about 5 hours or until tender.

2Remove roast and break up with a fork.

3Return to pot. Cook, uncovered, about 1/2 hour until thick.

4Serve over corn chips.
