Bean Soup

Ingredients

  • assortment of beans: pinto, red kidney, lentils, small white beans, green split peas, pearl barley, lima beans, black-eyed peas
  • ham hocks
  • 1 Tbsp. salt
  • 2 qt. water
  • 1 large onion, chopped
  • 1 large can tomatoes
  • 1 tsp. chili powder
  • juice of 1 lemon
  • salt, pepper and garlic powder to taste

    Wash beans.

    Add salt.

    Add water and soak overnight.

    Drain the beans.

    Add 2 quarts of water and ham hocks.

    Bring to a boil. Simmer 2 1/2 to 3 hours.

    Add onion, tomatoes, chili powder, lemon juice, salt, pepper and garlic powder.

    Simmer another 30 minutes.
