Bean Soup

  • 2 lb. dried Great Northern beans
  • 1 (16 oz.) can tomatoes, diced
  • 1/2 (1 oz.) jar dried soup greens (can shred carrots instead)
  • 1 link reduced-fat smoked sausage (8 oz.), diced into small pieces
  • 1 oz. dried onions
  • pepper (salt after cooked, if necessary)

Directions

    Soak beans overnight or 4 to 5 hours. Cook with all ingredients until tender. Add water in pot to about 4-inches from top. (Needs room to simmer or will boil over.) Usually takes about 3 hours (to be well done).
