Bean Thickened Soup

  • cooking spray
  • 2 carrots, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 34 cups vegetable stock
  • 1 (16 ounce) can whole tomatoes, chopped
  • 1 (15 ounce) can great northern beans, rinsed and drained and pureed
  • 12 teaspoon dried thyme
  • 12 teaspoon dried sage
  • salt and pepper
  • minced parsley (to garnish)

Directions

    Spray a large saucepan with cooking spray; heat over medium heat until hot.

    Saute carrots, onion and garlic until onion is tender, about 5 minutes.

    Stir in stock, tomatoes and their liquid, pureed beans and herbs.

    Heat to boiling; reduce heat and simmer, covered, until carrots are tender, about 10 minutes.

    Season to taste with salt and pepper.

    Pour soup into bowls; sprinkle with parsley.
