- cooking spray
- 2 carrots, sliced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 34 cups vegetable stock
- 1 (16 ounce) can whole tomatoes, chopped
- 1 (15 ounce) can great northern beans, rinsed and drained and pureed
- 12 teaspoon dried thyme
- 12 teaspoon dried sage
- salt and pepper
- minced parsley (to garnish)
Directions

1Spray a large saucepan with cooking spray; heat over medium heat until hot.

2Saute carrots, onion and garlic until onion is tender, about 5 minutes.

3Stir in stock, tomatoes and their liquid, pureed beans and herbs.

4Heat to boiling; reduce heat and simmer, covered, until carrots are tender, about 10 minutes.

5Season to taste with salt and pepper.

6Pour soup into bowls; sprinkle with parsley.
