- 1 lb. red beans
- 1 head garlic, peeled
- ham hock, bacon or smoked pork pieces
- 2 onions, chopped
- 1 bell pepper, chopped
- 1 tsp. allspice
- 1/2 tsp. cloves
- 1 tsp. cumin
- 1 tsp. Italian seasoning
- 1 tsp. oregano
- 2 Tbsp. olive oil
- salt to taste
- rice
Directions

1Add ingredients (except rice) all at once to a large pot. Cook for 3 hours at medium heat until beans are very soft and 1/2 the liquid remains.
