- 5 to 6 lb. beef brisket
- 3 Tbsp. liquid smoke
- 3 Tbsp. Worcestershire sauce
- 1 tsp. garlic powder
- 1 tsp. celery seed
- 4 Tbsp. brown sugar
Directions

1Combine liquid smoke, Worcestershire sauce, garlic powder, celery seed and brown sugar; add brisket.

2If brisket isn't mostly covered, add some water and ketchup.

3Let set overnight in shallow pan.

4Place brisket in roaster pan; seal top with foil.

5Cook at 300° for 4 or 5 hours.

6Uncover.

7Add barbecue sauce if desired and cook 1 more hour.

8Remove meat.

9Let cool.

10Remove fat.

11Add two tablespoons flour and 1/2 cup water to meat sauce.

12Allow meat to cool before slicing.

13Slice across the grain very thin.
