- 4 beef cubed steaks (about 4 oz. each)
- 2 cloves garlic, minced
- 1/2 tsp. dried basil leaves
- 1/4 tsp. pepper
- 1 1/2 tsp. olive oil
- 2 small zucchini, sliced
- 6 cherry tomatoes, cut in half
- 1 1/2 tsp. Parmesan cheese
Directions

1Combine garlic, basil and pepper.

2Divide mixture in half. Press half of the seasoning mixture evenly into both sides of steaks.

3Heat oil and remaining seasoning mixture in large nonstick frying pan over medium heat.

4Add zucchini; cook and stir 3 minutes.

5Add tomatoes.

6Continue cooking 1 minute, stirring frequently.

7Remove vegetables to warm platter.

8Increase heat to medium high.

9Parboil steaks 3 to 4 minutes, turning once. Season steaks with salt if desired.

10Garnish vegetables with Parmesan cheese.
